One week of Breakfasts, Lunches, and Dinners

So I am taking a course online in frugal grocery shopping and menu planning. It is going to teach me how to take advantage of the grocery store sales and coupons and how to significantly lower my grocery budget. I am not sure how it is going to work with my dietary restrictions, I know they don’t have coupons for the gluten free products I buy regularly… but I’m going to give it a try and see how it goes.

My first assignment was to come up with a weeks worth of meals for breakfast, lunch, and dinner. I decided to be an overachiever and came up with a little more than a weeks worth… I was trying to pick simple recipes that I can make quickly and that all three of us can eat, and that don’t require much packaged food.

Breakfasts
Yogurt and fruit with sliced almonds
Instant grits and fruit
Toast with peanut butter and banana
Scrambled eggs with spinach and cheese
Ham and Cheese w/egg sandwich
Pancakes with fruit
Home made granola with milk
Rice pudding
Rice cereal with fruit
Banana bread/Pumpkin Bread/Muffins
Cereal with fruit

Lunches
Tuna salad with lettuce wraps, apple, and corn chips
Taco salad with beef, beans, tomatoes, lettuce, cheese, and salsa
Peanut butter and honey sandwiches with veggie sticks
Tomato, Avacado, and cheese sandwiches
Lentil Salad with feta or goat cheese and veggies
Bean Salad with corn tortilla quesadillas
Egg Salad lettuce wraps or sandwiches
Eggplant Sandwiches (grilled eggplant and mozz cheese)
Lunchmeat and cheese lettuce wraps or sandwiches with corn chips and fruit

Dinners
Pasta with meat sauce and salad
Veggie stir fry with chicken or shrimp
Slow cooked pork with bell peppers, jalapenos, and onions served with corn tortillas
Shrimp noodle bowls
Broccolli Soup with romano cheese
Pork chops, mashed potatoes, peas, and applesauce
Pounded and breaded chicken breast with fettucini
Eggplant Parm Casserole and salad
Italian sausage with peppers, spaghetti, and salad
Taco bar with beef, beans, tomatoes, lettuce, salsa, cheese
Quick tortilla soup with chips and sour cream
Baked fish with lemon, green beans, and salad
Roasted Chicken with veggies and rice or potatoes
Fried rice with egg and veggies
White chili soup with turkey, spinach, and navy beans
Baked potato bar with cheese, bacon, broccolli, etc
