Menu Plan November 9th

So this week I am trying to use some things that I have to save a bit of money at the store.  Here is what I’ve got.

In the pantry…
Pasta
Quinoa
Pizza Crust mixes
White beans
Artichoke Hearts
Refried Beans

And in the fridge…
Spinach
Mini Bell Peppers
Cherry Tomatoes
Potatoes
Goat Cheese
Lettuce Mix
Pepperoni
Teff tortillas

I’ve got to get the essentials at Trader Joes, and use these ingredients to feed myself, my husband, and my toddler for a week.  Here’s my plan:

Dinners:
Spinach & Goat Cheese Pasta (based on a recipe from Giada De Laurentiis)
Quinoa Salad with Artichoke Hearts, asparagus, and sliced tomatoes
Pizza with Mushrooms, pepperoni, and bell pepper
Irish Nachos (Potato wedges with cheese, bacon, green onion, and sour cream)
Crock Pot Beef burritos served with brown rice and refried beans
Breakfast (Egg, Mushroom, Cheese Scramble and Pancakes)
Leftovers!!

Lunches:
Peanut butter and Jelly on Udi’s Bread, Applesauce or fresh fruit
Ham and cheese roll ups on tortilla, veggies, juice
Leftover Pasta, black beans
Leftover Quinoa Salad
Grilled Cheese Sandwich and tomatoes
Lunch out
Leftover Burritos

Breakfasts
Mighty Tasty Cereal Sample (hot cereal)
Cold Cereal with Milk and Blueberries
Instant Grits
~Toddler Breakfasts
   “MooTee” Breakfast Smoothie (One container of organic baby yogurt mixed with one container gerber fruit puree and some juice, milk, or water)
   Rice Cereal mixed with whole milk and fresh or frozen berries

Here is my shopping list:
Bacon
Stew Meat
Eggs
Milk (non fat, whole, and goat milk)
Goat milk cheddar or mozzarella
Sour Cream
Green Onion
Garlic
Mushrooms
Fresh fruit
Frozen Berries
Deli Meat
Ketchup
Cholula Sauce
Jam
Applesauce
Chicken Broth
Asparagus

I purchased all but the cholula, as well as a few extras…

Rice Mac & Cheese Mixes, Chocolate Chips, Carrot Apple Squeezers, Frozen Artichoke Hearts, Shredded Cabbage, and probably something I’m forgetting…
